Apple Raisin Baked Oatmeal

Introduction

This is a recipe modified from Sweet Pea's Kitchen Blog

I have modified it to be vegan and it can also be GF if you use Gluten Free oats.

You can eat it warm or cold and it is DELICIOUS! Feel free to add toppings like more raisins, walnuts/almonds, agave nectar, banana, blueberry, etc.

Number of Servings: 8

Ingredients

    2 cups old fashioned oats
    1/4 cup packed brown sugar
    1 tsp cinnamon
    1/4 cup raisins
    1 tbsp sliced almonds
    1 tsp baking powder
    1 tsp vanilla
    1 apple chopped fine (or grated)
    2 tbsp butter melted
    1 chia egg (let 1 tbsp chia seeds soak with 3 tbsp water for 10 minutes)
    3 scoops 100% Whey protein powder-unflavored
    1.5 cups unsweetened vanilla almond milk

Directions

1. Preheat oven to 375 F.
2. In a large bowl, combine oats, brown sugar, cinnamon, raisins, almonds, and baking powder; set aside.
3. In a small bowl, combine the milk, vanilla, grated apple, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray.
4. Bake at 375 for 20 minutes. Serve warm fresh from the oven or warm or cold after it has been refrigerated.



Serving Size: Makes 8 portions (this stuff is filling!!!)
