Summer Salad for the Eyes (and tastebuds!)

Introduction

For those who are watching their cholesterol, this salad can be a nice accompaniment to a lovely quiche or a meal for 1 in itself. Letting it sit overnight intensifies the flavours!

If you don't have a Remark store near you, just replace the dressing with one of your favorites that has a similar nutritional value (2 tsp = 35 calories, 3 grm fat, 0 cholesterol) or make your own!

Ingredients

    Ingredients:

    8 cherry tomatoes, halved
    75 grams steamed Green Beans
    85 grams shredded raw savoy cabbage
    1/2 red or orange pepper, julienned
    1/2 green pepper, julienned
    1/2 cup Blue menu chickpeas no salt added
    4 thin slices of sweet onion
    3 tbsp Remark Lemon Garlic Vinaigrette Dressing

Directions

Steam beans until they are bright green but still have a crunch to them. Rinse in cold water and set aside.

Julienne the peppers, add chickpeas, cherry tomatoes that have been halved, shredded savoy cabbage and onion. Add cooled beans and mix well. Add dressing, mix and let sit in fridge until ready to eat.

Makes 2 healthy sides (120 calories each) or one huge portion for 1 (for only 240 calories!)
