Introduction

Ingredients

    3 strips bacon, chopped and browned
    2 onions, chopped
    3 carrots, peeled and coursely chopped
    3 stalks celery, chopped
    2 Tbsp minced garlic
    1 Cup brown lentils
    1 Cup pearl barley
    4 Cups Chicken Broth
    6 Cups water
    2 cups diced tomatos
    1 tbsp herbs de provence
    1 bay leaf
    1 cup mushrooms, chopped
    1 cup red bell pepper, chopped

Directions

chop bacon, brown over medium heat in pot. Drain fat. Add Olive Oil, Onion, Garlic, carrots and celery and cook until onion is translucent, stirring frequently. Add lentils and barley and stir. Cook 1 minute. Add chicken broth, water, tomatos and spices. Cover and simmer 30 minutes. Add mushrooms and red pepper. Simmer additional 20 minutes.

Serving Size: makes 8 1 1/2-cup servings
