6 cans Tuna in water, drained
1 cup red onion, finely diced
1 cup bell pepper, finely diced
1 cup celery, finely diced
1/3 cup Patak's Chile Relish
1 whole fresh pomegranate (separted arils)
1/2 cup cider vinegar
1/2 cup fat-free plain yogurt
1/2 cup mayonnaise
1/4 tsp ground cumin seed
1 tsp ground pepper
1 tsp curry powder
Serve on 100% whole wheat bread, or over a bed of crisp fresh lettuce.
Note: if pomegranate is unavailable, try 1 cup dried cranberries, golden raisins, diced apples, or one small can of mandarin orange sections.
You may increase the protein content by adding 1 cup of sunflower seeds or slivered almonds.
Yields about 8 cups (2 quarts).
Serving size 1 cup.
