Number of Servings: 96

Ingredients

Flour, white, 6 cup (plus extra to roll out dough)
    Egg, fresh, 6 large
    Salt, 1.5 tsp
Water, tap, 1 cup (8 fl oz)
    HOT Mashed Potatoes, 5 cup
    Cheddar Cheese, .5 cup, shredded

Directions

Mix cheese into mashed potatoes, set aside.
Beat eggs, water and salt together.
Knead in flour until firm and well mixed.
Let rest for at least 10 minutes.
On a well floured surface roll out half the dough until it is about 1/8th inch thick.
Use a biscuit cutter and cut out circles of dough.
Place about 1/2 tsp of filling in the middle of each circle, press shut, using water to dampen the edge if it won't stick together.
Cook pierogies a few at a time in rapidly boiling, salted, water; until they float to the top.
Remove from water and place on a cookie sheet that has been sprayed with Pam.
After the sheet is full, place in freezer for 1-2 hours until pierogies are frozen. Place in Freezer bag to be enjoyed later.
**Do not freeze all of them, you will want to fry off some with butter and onions right after they are boiled.

Serving Size: Makes approx. 96 2-inch pierogies

Number of Servings: 96
