Mixed Bean Soup

Introduction

I combined a couple of different recipes to use what I had available....and it was wonderful. I will be making this regularly now. I soaked the beans overnight, and made the soup the next morning. Ingredients

    2 cups of 9 bean soup mix (Golden Boy from Costco)
    2 TBS vegetable stock powder (Knorr)
    1 TBS olive oil
    2 large onions chopped
    2 cups diced carrots
    1 cup diced celery
    4 garlic cloves minced
    1 green bell pepper diced
    12 cups of water
    2 tsp basil
    2 tsp oregano
    1 TBS cumin
    2 TBS chili powder
    28 oz can of diced tomatoes with juice
    1 cup frozen corn

Directions

Soak the beans overnight or for 8 to 12 hours. Drain and rinse well. Put in soup pot with 12 cups of water and the gasil, oregano, cumin and chili powder. Cood for about an hour and a half to two hours so beans are comepletely done. Meanwhile sautee the veggies in the oil about 15 minutes, and set aside. After the beans have cooked for about an hour or so, add the veggies and the canned tomatoes with juice. Puree somewhat with an immersion blender if you have one. We like to leave some chunks of veggies and beans. Cook about another 30 minutes or so. Just before serving I add the frozen corn, and cook just a couple of minutes.

You could serve this with sour cream or diced avocado, but I had neither the day I made the soup.
