Mexican Lasagna

Ingredients

    16 oz chicken breast
    Half a medium onion, diced
    1 cup enchilada sauce
    6 medium flour tortillas
    8 oz cream cheese, softened
    1.5 cup mexican style shredded cheese

Directions

1. Cook and then shred the chicken breast. Boilling works well for this.

2. Soften cream cheese in the microwave.

3. Place about 1/4 to 1/3 cup enchilada sauce in the bottom of an 8 x 8 in pan. Then place two tortillas in the pan followed by about half of the cream cheese, half of the onion, and 1/3 of the cheese.

4. Repeat step 3 once more.

5. Top with remaining 2 tortillas and any remaining enchilada sauce and cheese.

6. Place in oven at 350 degrees for approximately 20 - 30 minutes.
