Introduction

This is a festive and low calorie salad; cheese crumbles are added for flavor and protein. It would work well for picnics because there is no mayonnaise. Number of Servings: 24

Ingredients

    1 pkg. Easter Pasta
    1 can small pitted black olives
    1 cup fat free italian dressing (I used Wishbone)
    1 each red, green, and orange bell pepper
    1 medium red onion
    1 carrots, peeled and chopped
    1 hot house cucumber, peeled, seeded and chopped
    1 cup cherry tomatoes diced
    2 cups sharp chedder cheese crumbles
    2 stalks celery, chopped

Directions

Boil pasta, rinse in cool water and drain. Chop all vegetables and add to large bowl. Chop olives and add them and cheese. Add pasta and pour salad dressing over all. Stir together and add salt and pepper to taste (may also want to add a little celery salt for flavor).

Serving Size: Makes 24 servings, approx. 3/4 cup each
