    24 oz (1 1/2) lbs chicken breast
14.4 oz can diced tomatoes with mild green chilies
    15 oz can black beans

    1/4 cup chopped fresh cilantro
14.4 oz can fat free chicken broth
    3 scallions, chopped
    1 clove garlic
    1 tsp onion powder

    salt to taste

Directions

Drain black beans.

Add black beans, tomatoes, frozen corn, cilantro, chicken broth, garlic, onion powder, cumin, and cayenne pepper to crock pot. Season chicken with salt. (I also used crushed red pepper and garlic seasoning). Then place chicken on top of mixture.

  • Love, love, love this recipe! About five of us from my mom's group make this recipe all the time, everyone's families seems to like it. (I also use crock pot liners, super easy clean up!) - 12/31/11
