Pumpkin Muffins

Introduction

I tweaked this recipe from a favourite cook book. The original used white flour and white sugar. I also added applesauce to make the muffins more moist (and palatable), and double the chocolate chips. :) My husband says they taste too good to be healthy! Number of Servings: 12

Ingredients

    1 cup Oatmeal, ground in blender
    1/2 cup Barley Flour
    1 tsp Baking Soda
    1 tsp Salt
    1 tsp Cinnamon
    3/4 tsp Nutmeg
    1/2 tsp Ginger
    1 cup Chocolate Chips (or less, to taste)
    Combine in large bowl. Make a well for wet ingredients.

    1 Egg (large size)
    1/3 cup Cooking Oil
    1 cup Cooked Pumpkin
    1/4 cup Applesauce (or more, to taste)
    Blend together in medium bowl, add to dry ingredients. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full.

Directions

Bake at 400 F for 20 minutes. Let stand 5 minutes before removing from pan.

Serving Size: Makes 12 muffins.
