Whole Grain & Pumpkin Muffins

Introduction

Using whole oat and barley flours makes these muffins a healthy snack. The batter is thick, but if it is too dry, I add more applesauce. Using whole oat and barley flours makes these muffins a healthy snack. The batter is thick, but if it is too dry, I add more applesauce.
Number of Servings: 12

Ingredients

    1 cup Oatmeal (ground in blender)
    1/2 cup Barley Flour
    1 tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cinnamon
    3/4 tsp Nutmeg
    1/2 tsp Ginger
    1 cup Chocolate Chips (or less, to taste)
    Stir together in large bowl. Make a well in the centre.

    1 Egg (Large) - Beat in small bowl. Add:
    2 Tbsp Brown Sugar, packed
    1 cup Cooked Pumpkin (fresh pureed or canned)
    1/4 cup Unsweetened Applesauce




Directions

Bake at 400 F for 20 minutes. Let stand 5 minutes before removing from pan.

Serving Size: Makes 12 muffins.
