Crustless Spinach, Onion, Mixed Veggie Quiche

Ingredients

1 - medium onion, diced
6oz - fresh spinach
4 - large eggs
1/2cup - all purpose flour
1/2tsp - baking powder
1/4tsp - salt
pinch cayenne pepper
1 1/3 cups - non fat milk
1/4 cup - chedder cheese
1/4 cup - colby cheese
Directions
- preheat oven to 400
- spray oil pie plate
- microwave frozen veggies
- saute onion till translucent. Add spinach and cook till just wilted. Add mixed veggies and set aside to cool.
- In large mixing bowl whish together eggs, flour, baking powder and salt. Whish in milk, then stir in spinach mixture.
- Pour into pie pan. Top with cheese.
- Bake 25 minutes or until center is set and outsde edge is golden brown.
- Let stand 5 minutes.
Serving Size: makes 6 pieces
