Breakfast Souffle

Introduction

Really simple breakfast quiche/souffle recipe. Can omit bacon if you want a veggie option. Really simple breakfast quiche/souffle recipe. Can omit bacon if you want a veggie option.
Number of Servings: 1

Ingredients

    2 eggs
    4 slices of bacon, cooked crisply
    2 tbsp milk
    1/2 cup greens (kale, spinach, arugula)
    1/4 cup shredded gouda
    1 small red potato
    2 tbsp chopped white onions
    olive oil for sauteeing

Directions

Cook the bacon, set aside on paper towels to drain. Meanwhile, cook onions in olive oil until slightly translucent, then add grated red potato and cook until soft. Remove potatoes from pan, add a little more olive oil, and cook greens until wilted.

In a small bowl, whisk together eggs, milk and cheese. Add bacon, greens, and potatoes. Pour into baking dish (I used medium-sized creme brulee dishes). Bake for 1/2 hour at 375*.

Serving Size: Makes 2 servings
