Introduction

Number of Servings: 4

Ingredients

    4 low carb tortilla shells
    chicken breasts cut into bite size pieces
    red pepper chopped
    1/2 onion, chopped
    handful of spinach, as much as desired
    2 cloves of garlic, pressed
    3/4 cup low fat ricotta cheese
    3/4 cup shredded low fat mozzarella cheese
    1/4 cup chopped fresh parsley

Directions

warm oven to 350 degrees
cook chicken in frying pan
saute onion, red pepper for 3 minutes add garlic saute for 2 more minutes, add spinach saute for one minute or until spinach has wilted. Place this mixture in a paper towel lined bowl
mix ricotta, mozzarella and parsley
divided cheese mixture between 4 tortillas, divide red pepper mixture, fold tortilla in half, place on parchment paper lined cookie sheet, bake for 15 minutes or until crispy
