A quick and simple way to add more veggies to your life. You can use whatever kind of vegetables you like best and add them to sandwiches, pasta, etc., or just snack on them as is. The broiler really brings out the natural flavor of the vegetables like you would not believe! A quick and simple way to add more veggies to your life. You can use whatever kind of vegetables you like best and add them to sandwiches, pasta, etc., or just snack on them as is. Number of Servings: 6

Ingredients

    Summer squash, 4 small
    Red Ripe Tomatoes, 2 large
    Green bell Pepper, 1 large
    Olive Oil, Extra Virgin, 1 Tablespoon
    Diced garlic, 3 cloves

Directions

Simple! Chop up the veggies, toss them with the garlic and oil in a pyrex pan and place them right up under the broiler on high for about 15 minutes.

Serving Size: Approximately a cup to a cup and a half
