Number of Servings: 6

Ingredients

    *Refried Beans, 1 can
    Chicken Broth, 1 can
    Beans, black, 1 can
    Crushed Tomatoes, 1 can
Chicken Breast, no skin, 1 breast, bone and skin removed
    Beans, pinto, 1 can
    Spinach, fresh, 2 cup

Directions

Salt and pepper the chicken breasts. Saute in olive oil. Remove and cut into desired size pieces. Deglase the pan with some of the chicken broth. Add all the ingredients except the spinach. Cook until desired temperature. Cut the spinach into small pieces and add to the soup. Allow it to wilt for approximately 2 minutes.

I make this with Whole Food's Refried, fat free black beans with roasted jalapenos. It makes it nice and spicey.
