Introduction

Number of Servings: 4

Ingredients

    2 lb chicken breast or boneless thighs
    1/2 cup carrots diced
    1/2 cup bell pepper diced
    1/2 cup potatoes
    1 cup chicken broth
    1/2 cup water
    1/4 cup soy sauce
    1/4 cup tomato catsup
    1/4 cup onion
    2 cloves garlic minced
    2 tbsp olive oil

Directions

1. Stir fry all vegetables and spices except potato for 3 minutes with one tbsp olive oil. Then set aside.
2. Brown chicken with olive oil. Add chicken broth, water, catsup and soy sauce. Boil for 10 minutes.
3. Add potatoes. Boil for 5 more minutes.
4. Add the vegetables that you set aside. Cook for 3 more minutes
