Mock Chicken Almond

Introduction

A super easy casserole, not especially healthy but you can make some easy substitutions to make it better (turkey sausage, or no sausage because it is optional)

Ingredients

    1/2 cup uncooked rice
    1 envelope Lipton's dry chicken noodle soup mix
    1 cup chopped celery
    1 lb ground meat (turkey, chicken or beef) (ground turkey used for nutritional info)
    1/2 lb ground sausage (optional)
    1/2 cup chopped onion
    1/2 tsp salt
    1/4 tsp pepper
    2 cups boiling water
    1/2 cup (small package) slivered or sliced almonds

Directions

If using ground turkey, I like to season it up with some salt, worchestershire sauce, minced onions, a dash of bbq sauce, and a good amount of chili powder (these additions are not included in nutritional info, but help give the turkey more flavor)

Brown meats with onion, salt and pepper in a skillet. Drain off fat. In 2.5 quart casserole dish, first put in uncooked rice, then soup mix, then celery, then the meat onion mix. Over the layered casserole (yes, layered---do not mix!) pour the boiling water. Sprinkle almonds over the top. Bake, COVERED, at 350 for 1 hour.
