Fish Tacos

Introduction

Baja Style fish tacos with salsa, homemade avocado/mango salsa, and a citrus cabbage slaw Baja Style fish tacos with salsa, homemade avocado/mango salsa, and a citrus cabbage slaw
Number of Servings: 4

Ingredients

    4 White Fish Fillets (Cod)
    12 Corn Tortillas (taco size)
    Juice of 1 Lime
    1/4 Cup Diced Onion
    1/4 Cup Chopped Cucumber
    1/2 Mango, Chopped
    1 Avocado, Chopped
    8 Tbsp Cilantro
    12 Tbsp Salsa (jarred)
    Fat Free Italian Salad Dressing (used as marinade)
    Salt & Pepper to taste (I use fresh ground sea salt and fresh cracked black pepper)

Directions

Marinate Fish in Fat Free Italian Dressing for at least 1 hour
While fish is marinating, chop cabbage into strands/slaw-style and toss with diced onion and cucumber. Add 4 Tbsp chopped cilantro, lime juice and salt & pepper to taste, toss well to coat/combine and let sit in fridge while fish is marinating so flavours can blend.
Combine diced mango and avocado with the other 4 tblsp of cilantro and s&p to taste and let sit so flavours can combine.
After marinating time, cook fish by desired method (i use Pam Butter Flavoured cooking spray in a nonstick skillet on med heat).
Warm tortillas gently (i steam them for a few minutes)

Serve tacos by layering 1/3rd of a fish fillet (flaked), drizzle of salsa, Avocado Salsa, & cabbage slaw into a corn tortilla.

Yield: 12 tacos (3/person)
