Italian Veggie Soup

Introduction

Number of Servings: 6

Ingredients

    4 cups water
    2 cups Imagine Organic Low Sodium Vegetable Broth
    1 can tomato paste (6 oz.; I used Hunt's Natural)
    4 stalks celery, sliced fairly thinly
    2 sm. potatoes, peeled & diced small
    1/2 bag Bolthouse baby carrots
    1 onion, peeled & diced
    1 cup Lima beans
    1 cup Kroger Italian-Style Vegetables
    1.5 tsp each Simply Organic All-Purpose Seasoning, dried basil, oregano, parsley, & garlic (may substitute fresh herbs; just add at end)

Directions

Combine water, broth, paste, Lima beans, and seasonings, if using dried. Bring to low boil, then reduce heat to a simmer and add potatoes, carrots, celery, and onions. Simmer about 20-25 minutes, then add Italian vegetables. Simmer about 10 minutes longer. Serve immediately. Flavor deepens and improves the next day, but is delicious immediately, too!
