Introduction

Can easily cut recipe in half, and use one variety of bean. We love this recipe so much, it doesn't last long. Very versitile for uses...as a dip, spread, on salad...use your imagination!! Number of Servings: 16

Ingredients

    1 can (15 oz) pinto beans, drained
    1 can (15 oz.) lima beans, drained
    3 cloves garlic, crushed
    2 cups ricotta cheese, part skim
    1/4 c. butter, melted
    2 T. lemon juice
    1/2 tsp. salt
    1/4 tsp. pepper
    1 T. dried parsley
    1/2 - 1 tsp. dried dill weed


Directions

Combine all ingred. in blender or food processor and process until smooth. Chill and serve. Can chill in individual lightly oiled ramekins, bottoms lined with discs of waxed paper, and turn out to serve, removing paper.

Serving Size: Makes 16-1/4C. servings
