Chocolate Triffle

Ingredients

    3/4 c. Egg Beaters
    2 T. Butter unsalted
    1/4 c. unsweetened applesauce
    1 c. + 2T + 2 tsp Splenda Brown Sugar Blend
    2 c. Self Rising Flour
    1 T. Vanilla Extract
    1 1/2 cups Chopped Peanuts
    6 oz. Semi Sweet Chocolate Chips
    2 (1.3oz.) pkg.Sugar Free Cook & Serve Chocolate Pudding
    prepared using fat free milk
    2 c. Heavy Cream
    Walden Farms Sugar Free Chocolate Syryp for drizzling

Directions

Preheat the oven to 375 Degrees F. Grease and flour a 13 x 9 by 2 inch pan. In a bowl, beat the eggs and butter and applesauce together. Add the brown sugar, and then gradually add the flour and mix well. Stir in the vanilla. Fold in the one cup of the nuts, coconut and chocolate chips. Spread the batter in the prepared pan and bake for 25 to 30 minutes. Cool. Prepare the pudding using fat free milk. Let cool slightly. Whip cream and powdered sugar together until stiff. Crumble the brownie into chunks and then layer one third into a large glass bowl. Spoon half the pudding over the brownies. Spoon one half of the whipped cream over the pudding and scatter one third crumbled brownie. Spoon the remaining half of the pudding and rest of the cream. Layer remaining one third brownie, drizzle with chocolate sauce and refrigerate until serving time.
