Roasted Vegetables

Ingredients

    Green and/or red peppers
    sundried tomatoes in olive oil
    mushrooms sliced
    asparagus spears
    minced garlic
    balsalmic vinegar

Directions

Slice 2 bell or red peppers.
Wash and snap 1 pound asparagus spears
Mix together with 1/2 cup sundried tomatoes in olive oil and sliced mushrooms, vinegar and garlic.

Roast in 375 degree oven for approx 1 hour stirring every 10 - 15 min.
