6 corn tortilla
1 lb cooked lean ground turkey
1 medium onion chopped
1 green pepper chopped
1/2 c chopped black olives
1 cup chopped mushrooms
1 large can enchilada sauce
Sautee veggies. Drain both veggies and meat
Meanwhile soak corn tortillas in 1 cup of enchilda sauce for about 10 minutes
In a bowl mix meat and veggies with aout 1/2 c enchilada sauce
In a large rectngular pan lay 3 corn tortillas on bottom of greased pan. Dump in meat and veggies and top with remaining tortillas. Top with about 1/2 c of enchilada sauce and then cheese.
Bake in 400 oven for about 30 minutes or until bubbley.
I like to servce with chipotle tabasco and fat free sour cream.
