Chicken Corn Chowder

Introduction

Number of Servings: 6

Ingredients

    1 large potato, diced small
    1 2/3 cup chicken broth
    1 cup frozen yellow corn (steamed)
    1 cup chopped chicken breast
    1/2 cup milk
    1 tablespoon corn starch
    1 teaspoon Cajun seasoning

Directions

Dice a large potato and cook for 12-15 minutes in the chicken broth. When potatoes are done, add the cooked yellow corn and chicken breast and milk and Cajun seasoning.

Heat until not quite boiling. Scoop out a ladel of broth and dissolve corn starch in the ladel of broth. Return to pot and heat until slightly thickened.

Serve at once. Makes about 6 half cup servings.
