Italian "BLT" (Pasta)

Introduction

I took the basic elements of a BLT and turned them into a whole wheat pasta dish. I use angel hair so it cooks quickly as this is a lunch dish for me. Number of Servings: 1

Ingredients

    1.25 oz whole wheat angel hair
    1 cup fresh spinach
    1 med. fresh tomato, chopped, seeds removed
    1 Tb. Balsamic Vinegar
    1 clove Garlic, finely chopped
    2 slices extra lean turkey bacon, cut into small pieces
    2 tsp olive oil

Directions

cook angel hair according to package instructions.

While pasta is cooking, in non stick pan, "stir fry" the bacon pieces. when bacon just starts to brown add 1 tsp of olive oil to the pan and the garlic. Stir fry a little longer until bacon is nice and brown, almost done. Add the other tsp of olive oil and the tomatoes, saute another minute. add the balsamic, stir and then stir in the spinach.

By this time, the angel hair should be done, drain and then stir it into the the other items in the pan. Saute another minute then serve with 2 tsp romano cheese on top.

Using 1 oz prosciutto in place of bacon adds 30 calories to the dish.
