Chicken and Artichoke Salad

Introduction

I like to make this for lunch and use it as a filling in lettuce leaves. I like to make this for lunch and use it as a filling in lettuce leaves.
Number of Servings: 8

Ingredients

    4 grilled, boneless skinless chicken breasts,
    diced
    3 large green onions, chopped
    3/4 cup pitted black olives, chopped
    1 jar artichoke hearts, chopped
    2 cups cooked brown rice
    1/3 cup light mayonnaise
    1/3 cup plain low fat yogurt
    sea salt, to taste
    freshly ground pepper, to taste

Directions

Toss chicken with green onions, olive, artichoke hearts
and wild rice. In a small bowl, combine mayonnaise
and yogurt. Toss with chicken. Taste and adjust seasoning
with salt and pepper. (Salt and pepper not figured into nutritional info)
