Spicy Prawn Salad

Introduction

A creamy, spicy, delicious prawn salad. Low fat and high protein. Terrific on crispbreads, rice cakes, or toast. Also great on salad greens or in a wrap. Ingredients

    240g cooked prawns
    1 Tbsp light mayo
    2 Tbsp fat free Greek yogurt (Fage Total preferred)
    juice of one lime
    1/2 tsp - 1 tsp (to taste) Cholula hot sauce (or a good dash of Tabasco)
    1/2 tsp each cumin, paprika and chili powder
    1 tsp tomato paste
    one chopped spring onion
    salt and pepper to taste

Directions

Rinse the packet of prawns, then place in a bowl. Sprinkle with sea salt and cracked pepper, then squeeze over the lime juice. Sprinkle in the other seasonings and hot sauce. Add light mayo, fat free yogurt, tomato paste and chopped onion and mix together. Chill and enjoy!

Serving Size: Makes 2 servings of approximately 150g each.
