Papa's Groceries

Introduction

This is a recipe, as best I can remember it, that my dad cooked once or twice. My dad hardly ever cooked, but the story he told about this one made it memorable. According to him, this was my grandfather's recipe (we called him PaPa) and it had a name in Spanish that wasn't very nice. So he called it his 'groceries'. Slightly Mexican, but with a hint of sweetness from the nutmeg, it's a good way to use leftover rice and tomatoes. This is a recipe, as best I can remember it, that my dad cooked once or twice. Ingredients

    1/2 C chopped onions
    1 C Canned Tomatoes
    2 C rice, (Long Grain Texmati Brown -- prepared)
    1/2 lb 93% Lean Ground Beef
    1/4 tsp Nutmeg, ground
    1 tsp Chili powder, 1 tsp
    2 large fresh eggs
    1 C Colby and Monterey Jack Cheese shredded

Directions

Brown ground beef and onions in a non-stick pan coated with cooking spray.

Beat eggs and stir into fully cooked beef mixture. Continue stirring until eggs are fully cooked.

Stir in rice, tomatoes and spices.

Stir in cheese and heat only until melted.

Serve with salad or side vegetable.

Serving Size: Makes 4 generous servings
