Jenny's Egg Scramble

Ingredients

2 large eggs
1-2Tbsp nonfat milk
salt and pepper, if desired
1 Bob Evans sausage link (cut into small pieces)
.5 cup (or less) green bell peppers, optional
2 Tbsp vidalia (sweet) onion, optional
1oz (or less) Velveeta Light Cheeese
Directions
Cook sausage link until brown and cooked through, remove and cut - set aside
In medium skillet, cook the onion and green pepper with cooking spray or 1Tbsp light margarine/butter.
While onion is cooking, mix your eggs with milk and add salt and pepper (if desired).
Add egg mixture to onion/pepper skillet and cook (while mixing together). Once egg starts to cook 1/2 way through, add the velveeta cheese and sausage **(this gives the cheese enough time to melt - cheese can be added at the same time egg is added to pan as well).
Put on a plate or in a bowl and enjoy!
