Chicken Noodle Soup

Ingredients

    8 cups chicken stock
    4 c. water
    1 T. olive oil
    1 small onion, finely diced
    4 cloves garlic, minced
    1 c. finely diced carrots
    1 c. finey diced celery
    1/4 tsp. cracked peppercorns
    1 lb. chicken breast, cubed
    flour, salt, and pepper
    8 oz. dry wheat pasta (any shape)

Directions

Heat 1-2 tsp. olive oil in large soup pot over medium low heat. Add onions and saute till light golden, then add carrots & celery and continue cooking till vegetables have softened a bit (but are not done through). Add more if if needed to prevent sticking while cooking. Add garlic and saute till fragrant, toss in peppercorns and give it a quick stir, then add stock and water. Bring stock mixture to a low simmer over medium low heat and simmer 20 minutes.

While soup simmers, cube chicken and toss with seasoned flour till well coated. Heat remaining 1 tsp. olive oil in nonstick skillet over medium high heat. Brown chicken cubes (work in batches if needed), but do not need to cook them through. When all chicken is browned, set aside.

When soup has simmered 20 minutes, add chicken cubes and pasta and simmer till both are done, 5-10 minutes (check the pasta package for exact cooking times).
