Spicy Vegan Fajitas

Introduction

This tomato-based bean mix is perfect for dishing up on flour tortillas, a bed of rice, or even straight from the bowl.

Number of Servings: 12

Ingredients

    For 12 servings:
    Chopped onions - 1 cup
    Chopped garlic - 4 tsp
    Diced tomatoes - 1 28 ounce can
    ground cumin - 1 tsp (I use heaping teaspoons!)
    Black pepper - 1/8 tsp
    Kidney Beans - 1 15 ounce can (about 2 cups)
    Diced green chiles - 1 4 ounce can
    Whole kernel corn, frozen - 1 cup
    Red Pepper Flakes

Directions

Saute onions until translucent, then add garlic and cook for 1-2 minutes longer.

Add strained tomatoes, beans, corn, green chiles, and spices. Cook for 20 minutes.

Serve on a flour tortilla, a bed of rice, or treat it like a thick stew and eat straight from a bowl. A sprinkling of cheese and dollop of sour cream helps to mellow out this spicy dish.
