Ingredients

1 Tbsp coconut oil
1 Cup onion, chopped fine
2 stcks of celery, chopped fine
1 Clove garlic, minced
2 Carrots, chopped fine
1/2 tsp sea salt
1/2 tsp black pepper
1 LB ground beef, extra lean
1/3 Cup ketchup. low sugar
1/2 cup almond meal. or othe breadcrumbs of choice
2 eggs,
3 Tbsp dried parsley
Directions
1. Preheat oven to 350 degrees F. Chop the vegatables very finely in a food processor.
2. In a large skiller, heat the oil to medium heat. The cook the onion, celery , carrot, and garlic, stirring occasionally for about 5 minutes. Cover and cook untill the carrots are tender, about 5 more minutes. Stir in salt, pepper and parsley. Remove from heat.
3. In a large bowl , combine the beef, eggs, vegtables, almond meal, and 1/4 cup ketchup.
4Grease a loaf pan with oil and then pour the mixture into it. Press down until the loaf is evenly formed. Spread the remaining ketchup on top of the loaf . Bake the meatloaf for 1 hr to 1 hr and 15 min.
Tip: Use grond turkey instead of beef for red-meat free.
Serving Size: makes a medium size loaf
