Summer is fast approaching and who wants to be in a hot stuffy kitchen? Not me! This fruity, delish and healthy "soup" is packed with fiber, calcium, protein and good taste! Summer is fast approaching and who wants to be in a hot stuffy kitchen? Not me! This fruity, delish and healthy "soup" is packed with fiber, calcium, protein and good taste!
Number of Servings: 4

Ingredients

    1 large ripe banana, peeled
    2/3 cup frozen unsweetened whole strawberries
    1/4 cup frozen blueberries
    2 ounces soft tofu, well drained
    8 ounces low fat vanilla yogurt(about 1 cup)*
    3/4 cup fat-free milk
    1/2 cup granola*+
    1/4 cup fresh or frozen blueberries


    *Dannon's Low Fat Vanilla Yogurt was used
    *+Kellogg's Low Fat Granola(w/o Raisins) was used

Directions

Cut peeled banana into chunks. Freeze for about 30 minutes or until firm. In a blender, combine banana, frozen strawberries, the frozen blueberries, tofu, yogurt and milk.
Cover and blend until smooth. Pour into soup bowls, top with granola and additional blueberries if desired.

Serving Size: MAKES 4 SERVINGS
