TC Crockpot Lasagna (w/Eggplant)

Introduction

Lasagna with eggplant; good for a workday meal. Can easily add other veggies in the future. Lasagna with eggplant; good for a workday meal. Can easily add other veggies in the future.

Ingredients

    Ground Turkey
    Eggplant
    Ricotta
    Mozzerella
    Marinara
    Lasagna Noodles (only 6)
    Water
    Red Pepper Flakes
    Basil
    Garlic
    Onion Powder

Directions

Season and then brown the ground turkey in a nonstick pan coated with 1 tbls olive oil. Stir in red pepper flakes, basil, tomato sauce, eggplant, and water. In a bowl combine the egg substitute, ricotta, and parsley. Place enough meat sauce to cover the bottom of slow cooker. Top with 3 noodles, broken to cover the meat sauce. Cover noodles with meat sauce, then continue layering ricotta, meat sauce, mozzerella. End with a layer of noodles, sauce and top with slices of mozzerella. Cover and set slow cooker on low. Can cook safely all day.
