Banana-Nut Protein Pancakes

Ingredients

1 banana
1/4 cup rolled oats
2 tbsp low-fat cottage cheese
2 egg whites
1/2 tsp vanilla
2 tsp walnuts, chopped
nonstick cooking spray
2 tsp maple syrup
Directions
In a blender, combine banana, oats, cottage cheese, egg whites, and vanilla; blend until smooth. Stir in walnuts. Heat large skillet over medium heat and coat with nonstick cooking spray. Pour batter into skillet to make two 4-inch pancakes; cook 3 minutes on each side. Drizzle with maple syrup.
