Tex-Mex Tofu Scramble

Ingredients

3 oz (85 grams) firm tofu, drained
1 tsp olive oil
1/8 tsp turmeric
1/4 cup salsa
1/4 cup black beans, drained and rinsed
2 tbsp cilantro, chopped
1/2 grapefruit
1 slice whole-grain bread, toasted
1 tsp butter
Directions
Mash tofu with a fork. Heat olive oil in a medium skillet over medium heat and saute tofu with turmeric 3 minutes. Add salsa and black beans; saute 5 minutes. Top with cilantro.
Serve with grapefruit and toast topped with butter.
