Salmon Cakes with Spicy Dressing

Ingredients

    3 oz water-packed salmon, drained
    1/4 cup whole-wheat bread crumbs
    1 egg, beaten
    2 green onions, finely chopped
    salt and pepper
    3 tbsp reduced-fat mayonnaise
    1 tsp lemon juice
    1 tsp Old Bay seasoning
    pinch of cayenne
    3 cups mixed salad greens

Directions

Mix together salmon, bread crumbs, egg, green onions, salt and pepper. Form into 3 patties. In a medium skillet coated with olive oil over medium heat, brown patties 3-4 minutes each side.

Meanwhile, combine mayonnaise, lemon juice, Old Bay seasoning and cayenne.

Place mixed greens on plate and top with salmon patties; drizzle with dressing.
