Ingredients

4 oz. ground turkey, 93% lean
1/2 to 1 tsp salt-free Mexican seasoning or rub. (I use Mrs. Dash southwest chipotle or Trader Joes southwest seasoning
3 cups finely chopped arugula or romaine, or combo
2/3 cup well-drained fresh pico de gallo or salsa
1/2 oz. baked tortilla chips, crushed with your hands
2 tbsp. low-fat Mexican ranch or ranch dressing (I use Hidden Valley Ranch Lite
Directions
Preheat small nonstick skillet over medium-high heat. When hot, add the turkey (or lean beef), seasoning or rub, and salt (to taste).Cook the turkey breaking it into large chunks with a wooden spoon until no longer pink, 2 to 4 minutes. Let the turkey cool at least 1 minute before adding it to the salad.
Meanwhile, place the greens, pico de gallo, and chips in a large bowl. Drizzle the dressing over the top, akk the turkey, and toss well. Serve immediately. Enjoy!
