    Mashed Potato Topping
    1 c plain, unsweetened soy milk
    1/2 c Nutritional Yeast
    1 tsp salt
    1 TB onion powder
    1 tsp garlic powder
    6 medium Potatoes peeled

    1 large onion, peeled and diced
    4 carrots, peeled and chopped
    1 red bell pepper, diced
    1 yellow bell pepper, diced
    1 orange bell pepper, diced
    1 c. chopped mushrooms
    2 c. frozen corn kernels
    4 15-ounce cans beans, drained
    4 TB whole wheat pastry flour
    2 tsp. chili powder
    1 TB McKay’s beef-like seasoning
    1 tsp. salt
    .5 tsp. garlic powder
    1 tsp. onion powder
    1.5 c. plain, unsweetened soy milk


Preheat oven to 350 degrees F.
Boil potatoes. When potatoes are done, add seasonings and mash. Set aside.

Sauté onion, carrots, mushrooms and peppers until onion is golden brown. Stir in corn, beans, 4 TB of flour, seasonings, and salt. Add soymilk and stir until it reaches boiling. Pour gravy/vegetable mixture into sprayed 9X12 inch pan. Cover with mashed potatoes. Bake for 40 minutes on rack in the middle of the oven.
