Ingredients

    2 pkg cranberry gelatin
    1.5 cups boiling water
    1 16 oz can whole cranberry sauce
    1.5 cups cold water
    one third cup sugar
    8 tab. light benecol spread
    8 ounces light cream cheese
    1 carton 16 ounces cool free
    1 15 oince mandarin oranges

    In large bowl dissolve gelatin in boiling water. Stir in cranberruy sauce and cold water. Refrigerate for 45 minutes.

    Meanwhile in a gowl combine cracker crumbs, half of the sugar and benecol. Press into an ungreased 13-by 9 in pan. Refrigerate till set. In a small mixing bowl beat cream cheese and remaining sugar until smooth. Fold in half of the cool whipped topping. Spread over crust. Fold oranges into gelatin mixture; spoon over cream cheese layer. Refrigerate for 4 hours or until set. Cut into 15 servings; dollop with remaining whipped topping. YIELD 15 servings.
