Number of Servings: 12


    1.5 lbs cream cheese
    3/4 cup sugar
    3 TBL Cornstarch
    2 small or 1 large egg (1.5 ounces)
    Vanilla 1/2 TBL - Imitation 1 TBL
    1/2 Cup plus 1 TBL Heavy Whipping Cream (9 TBL))


Soften cream cheese
blend sugar and corn starch together and add to the cream cheese
mix only at first speed, and scrape the mixture from the sides
add the fresh egg and mix, then scrape again
add the heavy cream and scrape again
add the vanilla and scrape again

put cupcake liner in pans, half a sandwich cookie in each one - scrape the filling into the mix, do not leave on the cookie (I don't know why)

pour the mixture into the cupcake liners
place the unbaked cupcakes on a sheet and
place in a pre-heated 425 F oven.
bake for 15 min.
let rest for 4 hours, ENJOY !!!!
