Broccoli-Cheddar Soup

Introduction

This is my healthier version of a broccoli-cheddar soup recipe I found in Parade magazine. I trimmed the thyme a bit and onion and substituted lower fat ingredients. My daughter is a picky eater, but she even loved it. Still a little high on fat grams, so I wouldn't eat it every day, but it is a good comfort food when you want something rich and creamy without totally blowing your food plan. Ingredients

    2 cans Swanson 99% fat free chicken broth (29 oz./822 g.)
    1/2 medium onion (can use 1 onion if you like)
    4 c. fresh broccoli, chopped (about 2 heads)
    Dash of garlic powder
    3/4 tsp. thyme
    2 bay leaves
    4 Tbsp. butter
    4 Tbsp. whole wheat flour
    1/2 tsp. salt
    Dash of pepper
    2 c. fat free milk
    2 c. reduced fat (2%) shredded cheddar cheese

Directions

1. In large saucepan, mix chicken broth, onion, broccoli, garlic powder, thyme, and bay leaves. Bring to a boil. Reduce heat, cover, and simmer 10 minutes until vegetables are soft.
2. Remove bay leaves and pour mixture into a food processor or blender. Pulse or puree until smooth. Reserve in bowl.
3. Melt butter in original saucepan. Whisk in flour, salt, and pepper until a thick paste forms. Add milk and cook, stirring occasionally, until mixture thickens. Add cheddar and stir until it melts.
4. Pour in broccoli mixture and cook until blended and hot.
