3/4 cup flour, do not sift
1/4 cup Splenda sugar blend
1 (3.4 oz) package Jell-O Butterscotch pudding mix
3 Tbsp oil
3 Tbsp maple syrup
3 Tbsp water
1 tsp baking powder
before starting, use a paper towel to lightly oil both baking plates, spray both plates with Pam generously to create crusty outside.
preheat cupcake maker
blend all ingredients in a bowl with electric mixer, batter will be THICK.
fill each mini cup with a heaping teaspoon of batter, do NOT use cupcake papers
bake for 12-15 minutes
Serving Size: makes 10 mini cupcakes, 1 cupcake per serving
