Broccoli and Papper Quiche

Ingredients


    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    1 tbs oil
    3 Eggs
    1 c Silk Lite Soy Milk
    1/2 Red or Yellow Bell Pepper, diced
    1/2 bunch Broccoli, steamed
    Shallots, 2 tbsp chopped
    *Morningstar Farms Bacon Strips 3 crumbled
    1/2 can Mushrooms
    Garlic, 1 tsp
    1/2 c Mozzerella cheese
    Salt and pepper


Directions

Saute shallots, garlic, bacon and peppers in oil till soft and remove from heat. Steam broccoli till just soft and remove from heat. Stir eggs, soy milk, salt and pepper together in a bowl. Fill Pie crust with veggies and cover with cheese. Pour egg mix over veggies. place on cookie sheet and bake at 350 for 45 minutes.
