Orange Carrot Pineapple Jello Salad

Introduction

An Easter tradition at my house :) An Easter tradition at my house :)
Number of Servings: 6

Ingredients

    1-box orange sugar free jello(the larger box)
    1-20 oz can crushed pineapple
    1-15 oz can mandarin oranges
    1/2 pound of baby carrots(though feel free to use larger carrots! that's just what I normally have on hand)
    4 cups of water (2 boiling 2 cold)

Directions

Use a grater to shred your carrots(you should end up with approximately 1 cup of shredded carrots)
Drain the oranges and pineapple and combine them in a bowl with the carrots.
Boil 2 cups of water for your jello.
In a large bowl whisk the jello mix with the 2 cups of boiling water.
Add 2 cups of cold water and mix again.
Add the orange/pineapple/carrot mix and stir it in well.
Place the mixture in the fridge and allow it to set for at least 2 hours.
Enjoy!

*I like to make this to take to school during the week. If you choose, you can separate the mixture into single servings before letting it set. Just be sure distribute evenly :)*
