Introduction

I make these with a gluten free flour blend but the original recipe used all purpose flour. Good either way. Nutritional info is based on rice flour and tapioca starch. Number of Servings: 14

Ingredients

    3 eggs, beaten
    1/3 cup oil
    3 cups 1% milk
    1/4 cup ground flax

    3 cups flour (can use gluten free blend)
    1 tsp salt
    2 Tbsp baking powder

Directions

Mix wet ingredients and add flax. Mix dry indredients, then add the liquid. blend to combine leaving some lumps.

If using a gluten free flour blend in place of wheat flour, add 1 tsp guar or xanthum gum and 1 tsp baking soda. Mix in blender until almost smooth.

Serving Size: makes 14 large pancakes
