Vegan Black Bean Chili with Orange and Cumin

Introduction

I got this recipe from Bon Appetit online and changed it slightly. I cut the cinnamon from 2 tsp to 1, 1 tbs of olive oil instead of the 2 it orginally called for, and I nixed the sour cream to make it Vegan. Number of Servings: 6

Ingredients

    2 Oranges
    1Tbs olive oils
    2 Cups chopped onions
    4 garlic cloves pressed or grated
    2 14.5 oz cans of diced tomatos with the juice
    4 cups cooked black beans
    4 tsp chili powder
    4 tsp cumin
    1 tsp cinammon
    salt, pepper and hot sauce to taste

Directions

Grate 1.5 tsp of orange peel and juice the orange.

Heat the oil in a large pan over medium-high heat. Add onions and saute for 5 minutes. Add garlic and spices and saute to get the raw taste out of the spices. Add beans, tomatos, and half the orange juice stirring often for about 15 minutes. Add the remaining orange juice and zest, season and serve.

Serving Size: each serving is a little over a cup.
