Introduction

I wanted refreshing, low calories and a good side to co with my chicken. Nothing beats a good salad! I didn't add olives, but you could if you like! I wanted refreshing, low calories and a good side to co with my chicken. Nothing beats a good salad! I didn't add olives, but you could if you like!
Number of Servings: 3

Ingredients

    1 Cucumber peeled and diced
    3 Small Roma Tomatoes diced
    1/4 of a small onion sliced thin
    1 1/2 hand fulls of shredded Romain lettuce
    1 oz of feta cheese
    12 little peperoncini slices - Just for hit of heat

    Dressing
    1 tbsp. of Olive Oil
    2 Tbsp. of Balsamic Vinegar
    Black pepper

Directions

Add all your ingredients in a bowl except for the dressing.

For dressing in a tiny bowl, add the olive oil and vinegar and black pepper. Wisk together, add to salad.

Chill in fridge so all the flavors blend together.

Serving Size: 3 heaping servings or 4 small sides
