Ingredients

    1 tbsp olive oil
    1 medium sweet onion, diced
    3 cloves garlic, minced
    Pinch of coarse sea salt
    Fresh ground black pepper
    3 medium carrots, diced
    3 medium celery stalks, diced
    1 tsp dried oregano
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp red chili powder
    2 cans (14.5 oz.) diced, no salt added tomatoes
    1 can cannellini beans, drained and rinsed
    1 can reduced sodium red kidney beans, drained and rinsed
    1 can reduced sodium black beans, drained and rinsed
    1 6-oz can tomato paste
    1 4-oz can diced green chiles
    3-4 cups water

Directions

Heat the olive oil in a dutch oven or stock pot over medium heat. Add the onion and garlic, cooking until the onions are transparent. Add a pinch of salt and pepper. Mix in the carrots and celery and continue cooking for about 3 minutes. Mix in the oregano, cumin, coriander, and red chili powder then add the tomatoes. Add all of the beans then mix in the tomato paste and chiles until smooth. Add 3-4 cups of water (depending on how thick you like your chili). Reduce to a simmer, cover and cook for 45-60 minutes.
